Watermelon Ice (Granita)

This is a refreshing way to top off a light meal on a sticky summer night. I takes some time, but is totally effortless, hard to mess up and completely customizeable.


  • 8 cups Seedless Watermelon cut into chunks. (you can substitute here with other melons, berries, etc)
  • 2 whole Limes, Juiced
  • 1/3 cup Sugar (use more or less depending on how sweet you like it. I’ve also had good results from Agave Nectar and Honey. Taste after blending and adjust)

Place the lime juice, half the sugar and as much watermelon as will fit in a blender. Process until smooth, adding watermelon until it’s all incorporated. Taste and adjust sweetness.

Transfer mixture to a large somewhat shallow baking dish. Freeze for two hours, then begin the process of lightly scraping the top, frozen layer with a fork. Return pan to freezer with the shaved ice on top; remove a couple of hours later and continue scraping. Repeat the occasional scraping process until the entire mixture is shaved. Store, covered in plastic wrap, until serving.

Serve in pretty glasses with a twist of lime.
